2 pie crusts
2 cups raisins
¾ – 1 cup sugar
1 tablespoon lemon juice
2 – 3 tablespoons flour
2 cups water
pinch of salt
1 tablespoon butter
Vanilla ice cream or freshly whipped cream
Preheat oven to 350 degrees.
Mix all ingredients (except for pie crusts) in a medium saucepan. Heat through on medium high heat and reduce to a simmer. Simmer for 5 – 10 minutes until mixture thickens. Allow to cool slightly.
Pour raisin filling into a pastry lined pie pan. Cut the second pie crust into lattice work and place over the pie pan. Bake at 350 degrees for 30 – 40 minutes until the pie crust is golden brown.
Serve with fresh whipped cream or vanilla ice cream on the side.
